RECIPE: SWEET & SPICY BAKED CHICKEN

If you think about it, this recipe is quite simple and is a better alternative than eating fried buffalo/BBQ wings. You can use any part of the chicken you like (or even adjust the recipe for a whole chicken), but I find that chicken breasts work better.
Ingredients:
4 boneless chicken breasts
1/3 cup of soy sauce
1/3 cup red wine
1 cup of honey
2 tablespoons of Sriracha sauce
2 teaspoons of minced garlic
1 tablespoon of chili powder
1 teaspoon of curry powder
1/2 cup of chopped basil
zest from half a lemon
Extra virgin olive oil or cooking spray
1) Clean and remove fat from chicken breasts. Place the chicken in a bowl.
2) Combine wet & dry ingredients. The Sriracha sauce is very hot. Add more if you like, but remember, I warned you. Add to chicken.
3) Let the chicken marinate for 1 to 12 hours (the longer, the better).
4) Pre-heat oven to 350 degrees Farenheit.
5) Get a non-stick pan and lightly drizzle Extra Virgin Olive Oil on the pan,, or spray it with cooking spray.
6) Cover the chicken with aluminum foil; or, if available, place a top over it.
7) Place the marinated chicken in the middle of the rack. Let it cook for 1 hour. Again, rememer to remove the top/cover after 40 minutes of cooking and let it cook uncovered for the remaining 20 minutes.
8) Serve.
This dish can be served with most rice and pasta dishes. The marinade (which is cooked with the chicken) thickens, so it can be used as a sauce. Feeds 4 people.
